Watermelon, along with tomatoes, pink grapefruit and guava are cooling fruits that help quench thirst and keep us hydrated in the summer heat.
They are high in lycopene an antioxidant that relaxes the muscle tension in blood vessels thereby increasing blood flow and benefiting cardiovascular health. When 2″ cubes of watermelon are stored in the fridge for 48 hrs and up to 6 days their vitamin and lycopene content is stable, though it’s still best to eat cut fruit within 3 days.
